adapted from this recipe (Gotta love Pioneer Woman!)
2 cans diced tomatoes (in the summer I use fresh and probably chop up between 6 or 8)
2 cans Rotel
1 small to medium onion, chopped
2 cloves garlic, minced
1 jalapeno, chopped (no seeds....unless you really want to add some heat)
1/2 t salt
1/2 t cumin
1 to 2 bunches cilantro, chopped (save some to add at end)
1 t lime juice
Combine all ingredients in a large bowl and blend with an immersion blender (love that thing). Add some rough chopped cilantro and stir in. Serve cold.
