Here's a fun and easy treat for Valentine's Day...or any day!
canola oil for frying (enough for tortilla pieces to move around in pot)
cinnamon and sugar to taste
Heat several inches of oil in pot to about 350 degrees. Meanwhile, cut out tortilla shapes with cookie cutter. Prepare a plate with several layers of paper towels for draining. Oil is ready when a sprinkle of water pops. - just run your hand under some water and flick your fingers over the oil. When it pops, it's ready. Drop in a few tortilla pieces being careful not to crowd them. They need to be able to move around. When they begin to turn golden, flip. When both sides are a nice golden color, remove from oil and drain on paper towels. Sprinkle right way with cinnamon and sugar on both sides. Repeat with the rest of the tortilla pieces. These are best served right away.
