Scrumptious Pumpkin Pancakes



Does your family love pumpkin? We seem to like just about anything pumpkin.  Especially these pancakes!
Scrumptious Pumpkin Pancakes
2 cups flour
3 tbsp brown sugar
1 tbsp baking powder
1/2 tsp salt
1 tsp pumpkin pie spice
1 tsp vanilla
1 3/4 cups milk
1/4 cup oil
3 eggs, beaten
3/4 cup pumpkin puree  
 
Combine wet ingredients in a bowl. In separate bowl, combine dry ingredients. Combine wet and dry and whisk together until combined. Don't mix too much. Let batter rest for about 10 minutes. Heat griddle to 325-375 degrees. (mine cooks a little hot so I go lower with the temp). When bubbles start to show, they are ready to flip.  Cook until they look delicious on both sides. Serve with butter and a dusting of powdered sugar.
